Cranberry Applesauce Muffins
As promised, the first recipe using Sweet Bread Mix. These are FABULOUS muffins. Not too sweet, with a nice appley flavor.
So, let's get right to it.
Cranberry Applesauce Muffins
3-3/4 cups Sweet Bread Mix
2 eggs, beaten
1-1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp ground cloves
1 cup applesauce
1/2 cup dried cranberries (more, if you like)
Preheat oven to 325F. Line muffin tins with paper liners. Set aside. In a medium bowl, combine all ingredients. Stir to blend.
Fill muffin tins 2/3 full.
Bake 20 to 30 minutes until golden brown. Cool. Turn muffins out of pan. Yield 24 muffins.

This recipe makes a lot of muffins. So, what to do with all those muffins? FREEZE half to use later! They freeze GREAT!
If muffins aren't your thing, you can also pour the batter into bread pans. The batter will make one 9x5 loaf or two 7x3 loaves. YUMMY!!!
