Crazy Simple Fudge


If you read this post where I rambled on about sweetened condensed milk (and the lack of it), then you will already know that this must be the fudge I was talking about making. I absolutely LOVE this recipe! It's ALMOST foolproof. I say ALMOST because I can mess up just about any recipe depending on any number of variables. BUT. It's so close to foolproof (and FAST) that I'm going to share it with you today.

Crazy Simple Fudge:

2 packages (11oz.) chocolate chips (any flavor)
1 can (14 oz.) sweetened condensed milk
1 tsp. vanilla
1 cup chopped nuts (if desired)

Line an 8x8 pan with tinfoil. Coat tinfoil with shortening or butter. In a microwave safe dish (or double-boiler), combine chocolate chips and sweetened condensed milk. Microwave (or cook on low - if using double-boiler) for 2 minute intervals (stirring in between) until chocolate chips are softened. Stir until smooth. Add vanilla and chopped nuts. Pour into prepared pan. Refrigerate until set. Cut into 1-inch squares.

That's the basic recipe. There's many options to vary it up.
  1. Use white chocolate chips for a white chocolate fudge.
  2. Substitute crushed candy canes for the nuts for peppermint fudge.
  3. Substitute crushed Oreos for nuts for Oreo fudge.
  4. Substitute Dried cranberries for nuts for Cranberry fudge.  
There's probably a million different ways to vary up the basic recipe.....but you get the idea.
